Garret Dillahunt was born in Castro Valley, California, but grew up in Washington State. He studied journalism at the University of Washington before relocating to New York City and studying at New York University's graduate acting program. He was primarily a theater actor before pursuing film and television roles. He first appeared as a guest in popular television shows One Life to Live, NYPD Blue, and The X-Files. Later on, he landed a regular role playing two different characters on HBO'S Deadwood, was cast to play Jesus Christ in the controversial series The Book of Daniel, and appeared in series such as Law & Order and ER.
He has also become a busy film actor, appearing in the Oscar-winning drama No Country for Old Men (2007), Water Pills (2008), Pretty Bird and John's Hand. In addition to his dark role as a gang leader and prison escapee in The Last House on the Left (2009), Dillahunt appears in the sci-fi thriller The Road (2009), adapted from the novel by Cormac McCarthy. Dillahunt is happy to be involved with The Road, as he loves Cormac McCarthy's writing and is a big science fiction fan. "The most intelligent people I know are science fiction fans and writers."

From 2008 to 2009 he appeared in Terminator: The Sarah Connor Chronicles, a television series set after the events of the film Terminator 2: Judgment Day. The following year he took on a recurring role in the FOX seriesRaising Hope and in 2012, he appeared alongside Bruce Willis and Joseph Gordon-Levitt in the blockbuster Looper and with Brad Pitt and Ray Liotta in the crime thriller Killing Them Softly.
